a foodservice operator today, you have many seafood choices…in
species, in form and in source. Norwegian seafood is always an ideal
solution. Seafood from Norway has attributes that can’t be matched
anywhere. The quality is always outstanding; the flavor, taste and texture
is superior and the range of forms can fit almost any operator’s
menu.
It
all starts at the source. Norway has some of the world’s richest
fishing grounds. Norway’s fishing heritage goes back for generations.
There is great pride in offering the world the finest seafood. The Norwegian
government strictly regulatesthe industry to ensure that the quality
of the harvest will always be the highest possible. At every phase,
from the catch through to final processing, rigorous training is required.
And, Norway’s mandatory inspection system far exceeds the requirements
of the US HACCP regulations. But, it’s not only regulation that
produces superior product, the Norwegian’s take great pride in
their fishing industry.
Most
of the catch is harvested from north of the Arctic Circle where the
water is clean and cold. The majority of the Norwegian fleet is small
boats using the long-line fishing method. Each fish is handled one-by-one,
virtually eliminating bruising which improves the overall quality of
the catch. After each fish is pulled aboard, it is 
immediately
bled and iced to maintain freshness. These small boats return to port
often, sometimes every night, to ensure that the quality of the product
is carefully maintained.
Once
in port, the fish is inspected and immediately moved into the plants
where a combination of state-of-the-art equipment and careful craftsmanship
process the catch. From the time the fish is removed from the boat to
final freezing, is typically less than an hour, capturing freshness
at its peak when it arrives at an operator’s location.
