Ingredients:

  • 4 Tbsp. curry powder
  • 1 Tbsp. Dijon mustard
  • 1 cup flour
  • 2 Tbsp. paprika
  • 1-1/2 tsp. salt
  • 1-1/2 tsp. pepper
  • 2 avocados
  • 12-6 oz. Fjord Fresh Cod Loins
  • Oil for frying, as needed
  • 3 Tbsp. fresh mint, shredded
  • 1-1/2 cup sour cream
  • 1/2 cup tomato diced

Instructions:

  1. Make curry flour by combining the first six ingredients together.
  2. Halve, pit and peel the avocados. Cut the halves lengthwise into thin wedges.
  3. Combine the mint, sour cream and tomatoes. Set aside.
  4. Dredge the cod fillets in the curry flour, and panfry or deep-fry.
  5. Arrange the cod on plates.
  6. Top each fillet with a few slices of avocado, and a spoonful of mint sour cream sauce.
